Here's a Ratatouille recipe both me and Kale made for the first time back in February :3c
It's the recipe/version from the movie! <3
RATATOUILLE RECIPE (Yep, from the movie) - Vegan!
I didn't create this recipe, I got it from ChefSteps! (it was a video though, so I wrote it all down)
Ingredients:
- Zucchini
- Yellow squash
- Roma tomatoes
- Chinese Eggplant
*** Try to make sure all are similar in size/girth
- Onion
- Red pepper
- Garlic cloves
- Olive oil
- Fresh Rosemary
- Salt/pepper
- Parchment Paper or lid for baking dish
Step One: Peel/prepare Tomatoes
- Blanch tomatoes (Cut X's in tops and bottoms gently)
- Place them in boiling water for 45 seconds, then take out and place into ice water to stop them from cooking
- Gently peel skin off then cut into thin slices with sharp knife
Step Two: Cutting Veggies
- Use a mandolin (knives are also okay but mandolin is easier/faster) to slice up the zucchini, eggplant, and squash into even, very thin coin shapes (BE CAREFUL)
Step Three: SAUCE
- Dice up onion, red pepper, mince garlic, and add to sauce pan
- Add remaining scraps or unwanted pieces of the tomatoes/zucchini/eggplant/squash
- Add olive oil, salt/pepper, and cook on medium to low heat until jammy (consistency of jam)
- Pour into blender/food processor and add more olive oil, more salt/pepper, and the rosemary and blend together until smooth (will be yellow/orange color)
Step Four: Presentation + BAKING TIME
- Spoon out a small bit of sauce into a pie pan/baking dish
- Smooth the sauce out into a THIN layer so you can see the bottom still (this is going to prevent the bottom of the veggies from burning)
- Layer your veggies (zucchini, squash, eggplant, tomato) one by one in a circular formation like the image, making sure to go by color and keep a color combo going (ex: red, green, yellow, purple, red, green, yellow, purple, etc)
- Bake with parchment paper on top, or lid for dish, at 300F for 90 minutes
Step Five: NOMNOMNOM
- Spoon out some of the finished product onto a plate (using a ring mold will make it look pretty like in the Ratatouille movie!) and then drizzle some of that sauce over it and ENJOY! (Add some chives if you like!)

I realize I have been making something like the recipe above. Cut up onions, tomatoes, bell peppers, summer squash/zucchini with lots of garlic and a bit of oil and salt, broiled to perfection. The flavors are just amazing.
I do want to try this particular recipe, it's right up my alley!
