PokeBake day #2! Today we made cupcakes! Now I'm not really a fan of banana muffins/cake so these weren't my fav but they're still good and my 2 buds really really digged them so I think ya'll will too! This time my major pokemon catches were Clefairy, Diglett, and Ponyta! Was a great day!
**Because of the strawberry reduction it'll make your frosting much softer so please keep it in a cool place not sitting outside in the summer heat! Otherwise you'll have melted frosting**

Banana Chocolate Chip Cupcakes
Ingredients:
½ cup unsalted butter, softened
½ cup packed light brown sugar
¾ cup sugar
3 large eggs
1 and ½ cups mashed banana (about 3 ripe bananas)
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
½ teaspoon cinnamon
1 teaspoon salt
½ cup buttermilk
1 cup semi-sweet chocolate chips
Directions:
1. Preheat oven to 350*F
2. Cream butter and sugars together until light and fluffy.
3. With mixer on low add the eggs, one at a time, beating well after each addition.
4. Add the bananas and vanilla, beating on low for 1 minute.
5. Whisk the flour, baking soda, cinnamon and salt together in a seperate bowl.
6. Slowly add the dry ingredients to the wet in 3 additions, mixing well after each addition.
7. Add the milk and stir until combined. Fold in the chocolate chips.
9. Spoon batter into lined pan about 2/3 of the way.
10. Bake for 17-19 minutes.
Strawberry Buttercream
Ingredients:
1 1/2 c fresh strawberries
2 T sugar
3/4 c unsalted butter, softened
3 c powdered sugar
1/2 t vanilla
Directions:
1. Blend the strawberries together in a food processor or blender until smooth then transfer to a small saucepan over medium heat and begin to reduce.
2. Add the sugar and allow the mix to come to a gentle boil, stirring occasionally.
3. Boil for about 10 min, about when the mix is at half volume, remove from the heat and allow to cool fully. (should be about the thickness of jam). If need be use an ice bath to cool faster.
4. In a mixer beat the butter until fully. Slowly add about 2 cups of powdered sugar and continue beating until combined.
5. Add about 3-4 T of the strawberry sauce to the batter and continue beating. Add the vanilla.
6. If needed add more powdered sugar to thicken/sweeten or add a dash of milk/cream to thin.
