Honestly, they're the same but different and it can take a while to fully grasp in what ways xD
The main difference is spoo tends to be more opaque, whereas goo tends to be more "solid" in nature and "thicker" so it's mostly about trying to eye out the consistency when painting, and in both "stickiness" tends to be a factor too as yo can see in the final steps of both tutorials.
It sort of "finishes" the look.
This goo tutorial could also be used for help painting blood if someone knows how to tweak consistency visually to make the substance look "thinner" :)
