This is the kind of stuff I do when I'm both Really Bored and REALLY Hungry; I experiment with food.
I Don't know what this dish would be called, but it has: ground beef, sweet onions, potatoes, red bell peppers, broccoli, cooked in black pepper and paprika and topped with mozzarella and cheddar.

Alright for the play by play:
ingredients: 1/2-1 lb ground beef, 1/2 sweet onion, 2 potatoes, 1 red bell pepper, broccoli, sugar (white, light brown, dark brown, any works; it's for the onions) ground black pepper, paprika, vegetable oil butter/margarine, cheeses (mozzarella, cheddar, and pepper jack go well with this, but any is fine) and some small bowls and a med-large bowl
1st: Finely chop an onion; then dice potatoes (I had a cheap potato cutter and used it to save time; made fries out of them and then cut them into 3rd from there) and bell pepper (sliced into julienne and then cut into 3rd like the potatoes) I cut the broccoli into 4ths, cutting along the stem.
I put each one into separate bowls. (I also kept the skin on on the potatoes and ran water in that bowl to wash off any dirt; drain as much as you can)
2: Heat up a skillet to med high with a bit of vegetable oil (enough to coat the bottom) and don't start cooking until the pan starts to smoke a little (ventilation is key)
Add the onions and cook them out (about 3-5 minutes) season with black pepper a pinch of salt and the sugar (to help caramelize) and a few dashes of paprika. After a few minutes of cooking, add the potatoes and cook them out as well, seasoning to your preference, and cook for another 5 minutes. Afterwards, carefully remove the onions and potatoes into the med-large bowl and let that sit. (the spices should strengthen as they sit)
3: Add the butter to the skillet to uproot some of the flavor from the pan; season the ground beef before you add it to the skillet. Brown the ground beef and drain the fat. Then, add the bell peppers to the meat and cook for an extra 2 minutes. Re-add the onions and potatoes and cook everything together, add more spice if you'd like. Then add the broccoli. (I also splashed in a bit of water to help steam the broccoli and re-hydrate the beef) once everything's nice and cooked turn off the heat and top with your cheeses.
Boom!
