It's kind of gradual. At first it's loose, than it gets firmer and firmer. You could get stuck, but only if you abuse the opportunity.
Some people use this slow hardening to allow them to remove sharp edges easily. Let it harden for 2 or 3 hours, remove the forms, shave off the sharp edges. If you wait overnight, it will take serious effort.
It must be fresh. Even an hour will make it too hard to sink in much.

Twenty minute concrete is solid in twenty minutes, maximum. I've used it several times on projects at my mothers house where time was short. So let us hope that she isn't in that kind of concrete, the other? Couple three hours before she is in serious trouble, though it takes twenty four hours before you can walk on it (but it can still be damaged by dog claws up to three days after pouring.)
