A while back I was reading through the Gies' book on medieval village life. Apparently, people generally disliked going to the miller, because he'd take some of your grain in return for grinding the stuff. So most people ate pottage to avoid having to use the mill, and to make sure that they were getting extra mileage out of the stuff, they'd encourage their grain to sprout, by storing it in warm, slightly moist places. The pagaent of medieval history was created by people who were tripping on bad oatmeal.
