This is my first piece of isomalt (a sugar substitute) work. It was required for my Advanced Baking and Pastry class and I loved working on it even though it took so long to do. The roses were the easiest and I popped them out (after melting the sugar and pulling it) within an hour or so. The birds (hummingbirds) were blown and pulled.

I burned my hands but I was happy with the piece. It was not as tall or impressive as my classmate's but the amount of detail and it being a realistic piece (NOT ABSTRACT) made me happy.
