And to prove I can cook, or at least work a damned slow cooker thank god. I got what I am eating for dinner tonight. Some hearty pinto beans. Now nothing fancy here in all honesty. Recipe was super simple and fucking hell is it delicious. Just waiting on my cornbread to finish up and I will be in hog heaven!
Mantos
1 lbs pinto beans soaked
1/2 lbs chopped onions.
1 jalapeno pepper chopped finely
Salt and pepper to taste
1 tsp of hot sauce your choice. I used belly cheer.
2 strips of bacon
1/4 lbs meat scraps (can be anything really, this is just to empty out some leftovers.
Soak beans for 6-8 hours.
Combine all ingredients in a slow cooker set to high heat. Let sit 8-16 hours. I let mine sit from about 4 pm yesterday to about 3 pm today. So I went over but man are they good.
Salt and pepper to taste enjoy your mantos!
