Apple Cider Chicken

Ingredients
2 tablespoons olive oil
2 tablespoons butter
4 boneless, skinless chicken breasts (about 2 pounds) (here, I used bone in drumsticks with skin on)
Salt and freshly ground black pepper
1/2 Vidalia onion, chopped
1 Granny Smith apple, cored and sliced into 1/4-inch wedges
1 lemon
3 cloves garlic, minced
2 teaspoons dried thyme
2 bay leaves
2 tablespoons all-purpose flour
1 1/2 cups apple cider (used sparkling pumpkin cider - its apple cider with pumpkin in it - and its quite good -
but I also see no reason why you can't go one step further, with hard cider.)
Directions
Heat oil and 1 tablespoon butter in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, add to pan and sear until golden, about 4 minutes each side. Remove chicken from pan, and set aside. Add remaining butter and onion, apple, garlic, thyme and bay leaves. Saute until apple begins to get color and onions soften, about 6 minutes. Add flour and stir 2 to 3 minutes. Nestle chicken back into pan, add cider, bring to a boil, reduce to a simmer and cover. Cook until chicken is cooked through, about 12 minutes.

...And now for my take:
First, I coated the chicken with flour, and put the butter and olive oil in the large skillet as directed. However, I seared the legs for a good 5 minutes on each side, and then took out on a separate plate. Make sure you have a glass cover or splatter screen, this will be messy!
With that out of the way though, all you need is to put in the onions and garlic to saute at a medium heat; but as for the apples, this is where the lemon comes in. You MUST make sure you squeeze that lemon juice on those apples once you slice and chop them, otherwise they get very brown, very fast!
Then you just put in the apples (with the lemon juice as well, it'll balance out the heavy sugars in the cider)...then the cider...and then put back in the chicken, and let cook on medium to medium-low for a good 20 minutes, covered! (just flip them over at the ten minute mark along with basting them with the apples and cider, and you'll be all set.)
Then just serve with the gnocchi...and this is very good as well, will make again (though I might cook down the liquids a bit more, maybe add more flour as well to make a better gravy.)
