Getting rabbit is such a rare treat but I was lucky enough to source two of them. The first of them I roasted (http://www.furaffinity.net/view/21501853/) the second I made into a stew.
Rabbit Stew
1 prepared rabbit (with or without offal)
Veg of your choice (potatoes, carrot, sweet potato, broccoli and parsnip)
Frozen mixed veg (optional)
Garlic (2 cloves cut up finely)
Ginger (small piece cut up finely)
Juice of 1 orange
1 – 2 cups of water or stock
Gravy mix
Crockpot or oven stockpot
Salt and Pepper
Cut up your veg into even pieces and lay across the bottom
Add water, ginger, garlic, orange juice, salt and pepper
Joint the rabbit, include the offal if desired, place the pieces of rabbit across the top.
If using a Crockpot let the lot cook on low for about 2 hours or until the flesh separates from the bones.
If putting this into the oven set the oven to preheat at 180°C and cook for 1 -2 hours.
Carefully remove the rabbit pieces and take the flesh from the bones (be careful as the rabbit will be hot and there are quite a few small bones)
Return the meat to the pot and gently stir it through the veg
Sprinkle gravy powder over the stew and stir it in
Put it back into the oven or turn the Crockpot back on for a further 30 minutes
Check the flavours and adjust the salt, pepper or spices as desired. If you are happy with them serve as desired.
Goes well with rice, mashed potato or any variety of bread
