According to actual manuals, that is correct. The empty off-hand is better to be placed behind the body or rested on the hips in order to prevent it from being targeted. However in most depiction, a rapier strike is usually indicated by their hands hovering up and then stretched out during the thrust from the other hand. It adds the dramatic effect~ and I wouldn't say it's a good pose in a real combat :P
