Due to a curse that Amy and her family have she doesn't have a normal body like how an normal armadillo would look like, but still kept the shell part of her head. You can say that the curse is on her forehead where the glowing part is at as each of her family members kind of have it in different part of their bodies and the part can't really be destroyed or harmed that much. The bone armor she has does appear whenever when she's in danger but it kind of has a mind of it's own when it does that as she really has no control over it or when it'll happen (and doesn't help when you're out it happens to rip your clothes during public times). The bones will get harder and/or sharper when there's an actual threat that's coming at her to further her safety.

She can also see in the dark so don't let her glowing eyes fool you into thinking that it's just for show while it is also part of the curse as well.
