Wuff is currently working on the prep for his Christmas feast. Got the Brussels halved, seasoned, and coated with a good olive oil. They're bagged up and waiting a roasting tray tomorrow. Their balsamic-marsala reduction sauce is all ready to drizzle on them when they come out.
The berry-poached pears are poached and chilling, and wuff is reducing the poaching liquid to a syrup to drizzle over them. The Cardamom Mascarpone cream is cooked and resides in the soda siphon, ready to spritz out for the base of the pears.
The chuck steaks spent over 60 hours in a sous vide bath at 131 degrees. Wuff is portioning them out now, and wrapping them with a coating of mushroom duxeles and puff pastry. They'll go back and chill on their baking tray until tomorrow. The red wine, mushroom, beef jus accompaniment is already finished, and just needs warming tomorrow.
Wuffy just finished the scalloped potatoes, all nicely layered with thick cream sauce in their casserole dish, also chilling and waiting on the baking oven tomorrow.
Wuff will be making the caramelized onion-cheddar puff/crescents next, and putting them on their own tray in the chiller.
It's been a good day's work in the kitchen, but will make for a quick and easy feast in the morrow, so wuff can spend time with friends while things bake.
