Also, you say that this face-type is common for the buff ones, but you'd assume that a face shape would happen at birth.. or does the face actually reshape when the individual gets more toned? O:

It's more about the whole race having some kind of sub-species (they call them castes). They're roughly divided in two groups : the big ones and the small ones. The ones I call buff are just the big ones, they're not necessarly buff, just bulkier. The main difference between the two, though, is that the smaller ones can usually use a form of telekinesis (some of the big ones can, but it's very, very rare). It's not very impressive, but there are a few ones that are actually very powerful, and as a result they're the ones in command (they're mostly douchy aristocrats).
So, yeah, technically a Soolossean born a mage caste could get ripped if he wanted to, but that wouldn't make his face change.
