I've discovered a favorite Lego thing for me is little bitty spaceships. I think it's because they don't require fifty bucks worth of bricks to build, and can be put together fairly quickly, allowing more time to tweak and finalize the design.

Most of my stuff starts when I see a photo of someone else's creation that I like. I start copying what I like (where possible), and eventually it ends up in a different place. The one on the left was the first one put together. The middle was intended to be more chunky and 'oldskool', and it ended up looking a bit like a fox's head. The one on the right is most recent, and after the fact I realize I just made the cutesy Vic Viper seen in the "Parodius" video games.
