What does the green foam signify? Is it more rigid than the white?
We're currently sculpting a head and, while I've done a few in the past with various techniques, I thought I'd just poke around when I see something new to learn.

the green foam is the same as the white, just a bit softer to the touch, added it for more of a curved lip onto the base, both on the bottom and top <3

Light green and white foam will be your softest and easiest to work with.
Dark green and gray will be better for carving with carving knives.
Dark blue is a much harder, more stronger foams. They are best for toes and fingers.

So I would go with white for the bucket head and pieces and the green to lay over it, it also depends on sizes,
i go with 1inch to 1/2 an inch for more finer details. :)
