For Kalasians their upper head is considered as a secondary head to them as it has no mouth. So it's considered rude to ignore the lower head when speaking to them. There are a few exceptions to this rule but photos should always focus on or have the lower head in the frame when possible since it's considered the 'main' head.

By 'giblets' you mean her plumbing? well, I can't give you details how the insides are arranged but her plumbing is moved to the back of the tail, close to the base of it.
As for the second head, AKA the upper head, it's used more like a radar and extra storage for their thoughts and memories. the upper head not only has better sight, hearing, and sense of smell, but the second brain helps Kalasians with their memories and lets them multi-task better than anyone could with just one. plus it adds a bit of survivability as well if one of the heads were severely damaged or decapitated. besides that they add some extra emotions to what a Kalasian is feeling, just without a mouth.
