Coran is coming with another two I'll be doing later of him and Allura in their armor! ' v' I was also playing with the idea of doing a sticker sheet of all his younger versions too.
As for what animal he would be, I'm not too sure. Allura technically doesn't have an animal either since these were just making all the paladins lions for her, and all the lions presented as the element they represent.
