If you are talking about the original 4 games then elemental defenses and attacks are much more important than physical and magic defense and evasion. It's always a good idea to hold on to 2 or more armor sets for dealing with enemies that dish out a certain type of elemental attack and to be able to use magic and skills that can exploit an enemies elemental weaknesses.
Also if you think the games are hard near the beginning you don't want to know how hard they get past the halfway point. Be sure to stock up on Restoratives and Antidotes, you can enter and reenter box filled rooms in dungeons to replenish these. Certain enemies will completely wreck your s**t with status ailments if you don't use these. Also visit the magic shop there are scrolls that will get rid of enemy tolerances, specifically physical and magic tolerances.
If you're talking about the G.U. games on the other hand elemental stats are pretty meaningless which is a shame. Not to mention the level requirements for weapons and armor really sucked.

You can level up to the highest level in all of the games fairly easily. Sometimes it best to take that risk and try and defeat one or two enemies in a high level area to get the maximum experience boost, I think its 520 exp max which is half of the experience required to level up. Though I would recommend doing story levels at or a bit below the level they are as that provides quite a good challenge. Being over leveled makes the levels pushovers instead which is far less satisfying when you beat them.
