...I had time to do something just a little different, with more of a Hindu recipe!
This is also known as Kesari Aam Phirni and cooked from http://cubesnjuliennes.com/2013/10/.....m-phirni.html/
INGREDIENTS:-
Milk…………………………………………………………1 litre (1 3/4 cups)
Mango pulp……………………………………………..2 cups (Had about 1 1/2 from a fresh mango, pureed)
Khova/Mava…………………………………………….2 tbsp (Optional) (this is a cooked down milk - more like a thick cottage cheese, but I didnt add)
Rice………………………………………………………..1/3 cup (1 cup basmati rice)
Sugar………………………………………………………½ cup (may vary according to preference) - used coconut sugar
Cardamom powder………………………………….1 tsp
Rose essence………………………………………….Few drops
Ghee……………………………………………………….2 tbsp (skipped)
Saffron…………………………………………………….Few strands (Crushed)
* also added in 1/3 cup toasted pistachios
* and used 1 star anise, put in whole
To make:
Wash and soak rice for an hour. Grind it coarsely. (Skipped the grinding part)
In a heavy bottom pan, bring the milk to boil.
Add 2 tbsp of ghee and cardamom powder, simmer till the milk reduces to 2/3 of its volume.
Add mango pulp, ground rice, khova, saffron. Stir continuously for few minutes.
Add sugar, simmer till it reduces to half (Keep stirring occasionally to avoid burning and lumping). Add rose essence and stir
Once done, transfer the phirni to serving earthen pots.
Garnish with pistachios, almonds and saffron. Refrigerate it for few hours before serving.
Just let the milk boil first - without scalding or burning it - then add in rice, pureed mango and your other ingredients!
No need to cover it, but, you DO need to keep an eye on it and keep stirring it as it cooks down!
Then throw in the toasted pistachios (I put them in whole, but you can chop them a bit or leave them out altogether if you have a nut allergy)
Serve as is in the small bowls and enjoy!
