It's Spring, and time for tasty sandwich salads!
Ingredients:
18 ounces of cooked chicken, coarsely chopped
9 ounces of seedless red grapes, halved
3 tbsps of sweet pickle relish
1/4 Cup of chopped green onion
Mayonnaise
salt
pepper
Directions:
Mix the first four ingredients in a bowl, add enough mayonnaise to moisten all of the ingredients, and season with salt and pepper to taste.
See? Easy!
You can serve it by itself on a plate, on lettuce, or as a sandwich on white bread, wheat bread, pita, flatbread, lavash, naan, matzoh, what have you - but here it's served on King Hawaiian™ mini sub rolls.

just had some a few minuets ago.
currents or cranberries or even grapes
instead of raisins.
there are some amazingly good made up ones i get,
to have something to nibble on i don't have to fuss with
when i don't feel like doing so.
of course i like to boil chicken or turkey legs and throw in some pasta,
but that's for when i do feel like fussing a little bit.
the salad i get made up a couple of times a month for when i don't.
tj's makes the one with the canberries, they call 'wine country'.
i do make my own macaroni salad, with tuna in it.
or some other already cooked up meat of some kind.
