I made this treat this afternoon, and I admit to only one mistake - I used a smaller baking dish than the recipe called for.
Ingredients:
Batter:
1/2 Cup butter
1 1/3 Cup sugar
2 eggs
1 teaspoon vanilla
2 Cups buttermilk (shaken well)
4 Cups all-purpose flour
3 tsps baking powder
1 tsp baking soda
1 tsp salt
2 Cups of blueberries
Topping:
2/3 Cup AP flour
2/3 Cup sugar
6 tbsps butter, softened
Directions:
1. Preheat oven to 350 degrees F (180 C or Gas Mark 4), and butter and flour a 9x13 baking pan.
2. Sift together flour, baking powder, baking soda, and salt in a bowl.
3. Using a large bowl, cream the sugar and butter until fluffy, then beat in the eggs one at a time, and beat in the vanilla.
4. Mix the flour mix and buttermilk alternately in with the egg mixture until incorporated, then stir in the blueberries. Pour into the pan.
5. Combine the two topping ingredients (flour and sugar), then cut in butter until it makes coarse crumbs. Sprinkle on the batter.
6. Bake at 350 for 45-60 minutes or until a skewer comes out clean.
7. Let it cool before devouring.
