Quick glimps of things to come
Vrghr just picked up his special order of Pork Chops for the shop party/feast this Friday.
Wuffy thought he would give his fans a quick look at these beauties. These will go into the sous vide water bath with a combination of spices, butter, salt, and black currant jelly, and then they'll poach @ around 139 degrees for 2 1/2 to 3 hours.
After that, a quick chill until Friday. Then they get re-warmed in the sous vide again, followed by a crust of hazelnuts, panko, and Parmesan and a sear in the skillet for toasted crunchy coating.
Wuff bought 7 of them, cut to 2 inches thick each. That's a Tablespoon measuring spoon sitting in the photo, for size reference. The net weight of the pack was a little over 8 pounds, which means each of those chops is over a pound.
Hopefully the sous vide creates nice, tender, and juicy pork all the way through without drying out the edges, as is so easy to do with chops of this size. The sear will give the pale exterior a nice finish, and the nut coating should bring some interesting texture and flavor to the pork.
Looking forward to surprising the shop folks again, and hopefully some very good eats at work to finish out the month!

Baked apples are YUM, but wonder how well the coating would stick on the curved outside. And traditional apple slices just don't seem proper for this technique, though would make a great casserole with the nut-crusted topping.
Hmm... But what if wuff sliced the apples into circular "slabs".... That might work!

Quite true! Wuff has created a real "killer" of a lasagna (if Vrghr does say so himself) using mushrooms and zucchini. It was good enough that wuffy would eat it again instead of his traditional beef version (though that was pretty good too).
And enchiladas, pasta, and many other dishes respond REALLY well to Vege-conversion.

Mmm! Stuffed pork chops was one of this wuff's absolute favorite meal when he was a cub! It's what Vrghr asked for on birthdays as his special treat.
Wuff has found that doing a stuffed chop can actually be a bit of a challenging kitchen technique. You want the stuffing to be properly heated, but you definitely don't want those slabs of pork on either side to dry out from over-cooking. Balancing the two can be tricky!
Wuffy came up with a "cheat", and made a "deconstructed" stuffed pork chop casserole. It was DELISH!
Will have to make it again, and get pictures this time so that wuffy can post the results here on FA.

*grins* Wuff is hoping a LOT that this dish turns out how Vrghr is imagining it. Wuffy is thinking the flavors ought to all work well, but the techniques and such are just "theory" at this point.
It OUGHT to work out okay, but the proof will be in the pudding (or in the pork chops, in this case).
Vrghr made the curried Sweet Potatoes last night in the sous vide, and even through the plastic bags, the kitchen smelled of lovely, sweet curry aromas! YUM!
Wuff also pre-poached the chops pictured above, so that just a simple warm-up without need for a full cook-to-center can be done on Friday. The scent of the finished chops is very promising too! But the Black Current jelly didn't spread out quite as much as wuffy had hoped, so Vrghr's hoping it works out okay anyway.
