I imagine Osaris begins to follow Sephtis more due to blind curiosity than much else. She's lived her entire life in poverty, labouring just to survive and earn what meager possessions she has now. Hasn't everyone dreamed of a stranger sweeping them away to a marvellous adventure?

Which brings me to think of a head canon that although Sephtis claims Osaris annoys him he's secretly fond of her company and seeing as he's immortal, he continues to search for her reincarnations just to have her by his side again.
