XD I've been folding for most of my life, and its also one of the few things that I'm better than everyone else at :3 so I'm glad I can get that reaction from people. I was at an origami convention 2 years ago and some guys thought I was some kind of origami child prodigy until I told them that I was 15....I do not look like I'm 17 XD
I made this guy over here http://www.flickr.com/photos/bluepaper/3190251368/ and he stands about 2 and a half feet tall :3 The problem with making big stuff though, is that you need really large paper that is often hard to get your hands on. And even if you find some big sheets, it usually is rather thick.
elephant hide is already thick as is, let alone were it to be back coated, which I would want it to be considering the fact that it is a 2 colored model. Elephant hide really is not suited for folding like this, nor is it suited for wetfolding.
and considering the difficulty in finding elephant hide as of recently, I'd sooner use it on tessellated models as they better suit the natural stiffness of the paper.

I don't have a ton of experience with it myself, however I do know that it is one of the more preferred papers for use in tessellation folding. Joseph Wu has told me he'll sometimes use it for his stuff, but his stuff tends to be more dry tension than it it is wet folded, so I suppose that also says something.
Either way, I do know there are better papers out there for wet folding. Origamido, for example, is exceptional for this practice.
