Summer time, grilling time...
So here are some nice veggies, grilled Halloumi cheese and other stuff :3
ghostbear2k had the fun of preparing dinner tonight ... because
kuraiko was struggling to repair the little bearkitty's coffee maker. ^.^'
So here we go...
Skewered vegetables
- 2 small zucchini (or 1 bigger one)
- 1 red bell pepper
- 1/2 red onion
- olive oil
- Fleur de Sel or other Sea salt
Soak little wooden skewers in water. Wash bell pepper and zucchini, peel onion and cut everything into bigger chunks.
Spear everything onto 2 skewers (take 2, because it make it easier to turn on the grill), brush with a little olive oil and grill until the desired level of softness is archieved.
Sprinkle with a little Fleur de Sel
Stuffed tomatoes and mushrooms
- 4 big chestnut mushrooms
- 2 big tomatoes
- 1 garlic clove
- 1/2 red onion
- 1 slice of Feta cheese
- (optional: the remains of the bell pepper, tomato and the zucchini)
- fresh herbs (basil, oregano, parsley)
- salt, pepper, spices to your taste (I used Ingo Holland "Mallorquin herb garden", which is actually pretty spicy, because of the bird's eye chili in the mix, so careful with that)
- olive oil
- Sharp Cheddar cheese
Wipe down the mushrooms with a paper towel, remove the stems. Wash tomatoes, remove the green stuff, cut off the top and hollow them out. Peel onion & garlic, wash herbs and chop everything very finely.
Chop the mushroom stems, the tomato top, a bit of bell pepper and zucchini into small pieces.
Put everything into a small bowl, add crumpled feta, sprinkle in some olive oil and whip into a cream. Season to your taste with salt, pepper, fresh herbs and spices.
Grate some Cheddar.
Stuff tomatoes and half of the mushrooms with Feta cream, the other half of the mushrooms with sharp Cheddar and grill until soft.
Cover your mushrooms and tomatoes with some folded aluminum foil while grilling.
Bruschetta
- White Bread (Pane filone, Ciabatta, whatever you have at hand ... it's originally a poor man's food)
- Olive Oil
- Fleur de Sel or other Sea salt
- garlic clove
Cut your white bread into slices, roast them on the grill. Peel garlic, cut in half and rub the still warm bread with the garlic clove.
Drizzle some olive oil on the slice and sprinkle some Fleur the Sel or sea salt on top.
Usually eaten outside of Italy with tomatoes or other toppings, but this is the very basic version, which was originally a poor man's food.
Simple, down to earth flavors.
Serve everything with some grilled Halloumi (a tasty, slightly salty cheese that doesn't melt) and you are ready for a great meal.

Halloumi is actually a quite firm cheese that doesn't get really creamy. It even squeaks a little when you chew it. But it's very tasty.
