Most fursuits is designed to be cute and charming. I'm not much of cute and charming person and I don't feel that horses are cute. They are beautiful, elegant, whatever, but not exactly fluffy creatures you want to cuddle with.
So my fursuit is designed for not to be cute. How did I succeeded?

I don't know the proper terminology in English, but the main difference is that in case of real horse, there are two straps going from top of the head over cheeks. One holds the noseband and another one holds the bit. Bit isn't attached to the noseband, because you need it loose to control the horse. In my case there is only single strap which holds everything, because purpose of the bit isn't for controlling me, but to keep the mouth open so I can breathe a little :)
Also, real horse bridle has single headpiece, behind the ears. Mine has two, one for each ear, because otherwise it would not hold. Mine bridle has one additional strap going to sides of my mask, where it holds on snaps, something like second throat lash, because it wouldn't stay on otherwise.
So this is basically the difference from average horse bridle and you're right that "simplified" may be a little wrong word

I am familiar with the design of a horse bridle, and you did a good job explaining. It makes sense you would need a couple of extra bits of leather to hold the bridle on your headpiece, since its a little bit different to an actual horse head and the main thing that holds a bridle on is the tension between the bit in the horse's mouth and the band that goes behind the horse's ears. I think the rest is just to make the humans feel like the bridle is being held on by something. I have actually western bridles that are nothing more than a length of leather that goes around behind the horses ears (or around the horse's ears with a figure 8 looking piece of leather) and holds the bit in its mouth. I so prefer using those when riding, less work to put on the horse (and less work to clean) Since the bit is for show on your fursuit, it makes sense that you would need a couple of extra lengths of leather to hold it on. It must have been really fun to design, figuring out how to make it stay on. Great work.
