In favor of
puffin-cooks Fresh StrawBerry Bars. I decided to try my paw at making something similar. Seeing that I was fresh out of Strawberries. I reached for the next best thing, frozen blueberries that In happened to have had in my freezer. Want to make it? Here's how:
Preheat oven to 325-350 keep in mind some ovens run hotter and at higher temps, at others, and with my own oven, I have to be careful with that.
I used
puffin-cooks recipe for making her strawberry bars but I substituted frozen blueberries for the strawberries.Ingredients:
2 cups of all-purpose flour
1/2 teaspoon baking powder
a sprinkle of salt
1 stick of salted butter, cold and cubed
2/3 cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
3 cups Frozen Blue Berries
a dash of real cane sugar for sprinkling on top of frozen blueberries before topping (optional)
Instructions:
Preheat oven to 350 Fahrenheit and put some parchment paper in the bottom of a square baking dish.
In a bowl, mix flour, baking powder, and salt. Add the cold butter and cut, with a knife or a handheld pastry cutter, until the mix becomes crumbly in consistency.
In a separate bowl, mix brown sugar, egg, and vanilla, and then slowly add in the flour mixture, mixing and folding with a spatula or with your hands. When fully mixed together, the dough should be somewhat crumbly and not too wet but should hold together when patted with your hand. Set this mixture aside to place on top of the blueberry crumble. The last and almost final step Pour frozen blueberries that you have measured out into the pan that you have lined with parchment/ baking paper.
Then proceed to layer the blueberries with your topping before inserting into the oven. Cooking for 40 to 45 minutes - be sure to set your timer.
When it is finished cooking pull it out and set it aside to cool before digging into this delightful dish that you are welcome to top with whipping cream.
