Not much of a secret. First thing is, I'm a big fan of shooting with Canon digital. I haven't tried Nikon or some of the other competing brands, but based on my good experiences with Canon it's going to be tough to get me to switch.
Also, I have the best luck shooting in direct sunlight. I'm sure that more experienced photographers know ways of shooting around low light, but that's never worked out too well for me. Direct sunlight = vibrant color.
Finally, poor or weak color can always be tweaked in Photoshop. I often crop the framing of my shots (usually by trimming dead space off the sides or top), and sometimes while I'm at it I'll adjust the color balance if it seems like there's too much yellow, or not enough red, or what have you. It can take quite a bit of futzing to get the colors to really snap.
