
Yep, I'll throw this one in here :B
Ingredients:
Portobellos (At least 5 or 6)
1/2 stick butter
Your favorite boxed stuffing mix
1 cup (pre-cooked) lump crab
* Note - if you are shellfish allergic, you can easily swap this out with your favorite veggies, rotisserie chicken, BACON, etc.)
pinch of Old Bay
1/2 cup shredded mozzarella
grated cheese
Asparagus (a good bunch)
1/4 cup olive oil
lemon pepper mix (or whatever spice mix you like)
And...
Aluminum foil (to make a foil pack for the asparagus)
Wash the mushrooms with a soft brush to get rid of any extra soil/dirt, remove the stems and rinse off the insides as well.
Cook the stuffing mix according to the instructions (you usually only need butter and water - but, save at least a bit of that stick of butter for later!)
When cooled, mix the stuffing with the crab, then just put the mix right on top on the mushrooms - and this is where the rest of the butter comes in - just melt it and pour over the stuffing, then top with cheese.
Then all you need is a sheet of foil...a throwaway grill pan....turn your grill on to 300 F (Spray the foil first with either grilling spray or a non stick spray for food, that helps tremendously)
And then cook them, asparagus pack and all on one pan, for 20 - 25 minutes!
As long as you have a decent grill spatula (one with a long flat holding surface) you can get them out easy enough into whatever large serving dishes, and enjoy!
