
I made one more BotW themed dish but I couldn't decide between the fruit pie or fruit cake, so I made both. So here's how to make fruitcake pie.
What You'll Need:
-1 box of lemon cake mix (and all it's needed ingredients)
-1 large pie crust tin
-favorite fruits (keeping with the breath of the wild theme, I used "wildberries"-blackberries & blueberries, 2 mighty bananas sliced into coins, and 1 chopped red apple)
-butter (I unfortunately could not find goat butter....)
-brown sugar
-whipped cream
Step 1:
Start by making the lemon cake batter, as lemon cake is the only true "fruit" cake. Set aside for now after well mixed.
Step 2:
In a medium skillet, melt a full stick of butter and add the chopped apples, apples take longer to soften than the other fruit. Cook for about 3 minutes on med-high heat, then add the banana coins, 2 handfuls of blackberries, and half a cup of brown sugar. Continue to cook for about 5 minutes give or take. It doesn't have to be perfect, you just want to soften and cook them together for a bit until it all turns a redish purple.
Step 3:
Pour your simmered fruit directly into the pie crust tin and even it out. Next pour about half of the lemon cake batter over the top until it fills the edges, do not overfill. (Unless you're planning on making 2 pies, you won't need all of the batter, but don't let it go to waste, make a small lemon cake with the rest or even use it as waffle batter for some tasty lemon waffles.) When batter has settled, toss a handful of blueberries on top and let them sink in.
Step 4:
Bake at 350 degrees for 20-22 minutes until golden brown. Remove from oven and let it completely cool for at least 2 hours. When pie has cooled, add the entire tub of whipped cream to the top.
It serves much better in the second frame without all the fruit on top of it, but I was trying really hard to recreate the picture, even though I forgot to get oranges and grapes. Turned out very good on the inside though, the cake acts as glue to hold it all together and each fruit taste compliments the other without being too overpowering. I implore anyone who wishes to recreate it to try other fruit combinations and if you do, let me know how it turned out.
