Pumpkin banana spinach chia seed pancakes
The name I just made up because it is fun to say XD
1 banana
1 cup cooked pumpkin or butter nutsquash, just make sure it is peeled
2 cups spinach leaves
1 cup milk
2 eggs
1 TBSP apple cider vinegar
1 tsp vanilla
Dry ingredients
2 cups flour
1 TSP baking soda
2 TBSP brown sugar
1/4 tsp salt
1 TBSP cinnamon
1/2 tsp nutmeg
1/4 ( or to taste) tsp ground clove
1 1/2 TBSP Chia seeds
Vegetable oil for the fry pan
In a microwave proof bowl, Warm up the milk to about body temperature, then add the vinegar. Add eggs and vanilla and stir in. Blend the pumpkin banana and spinach. You might want to add a little bit of the milk mixture to help it blend well.
Combine dry ingredients in larger bowl, pour the other mixtures in it and stir until well combined, but it doesn't have to be smooth.
Fry up like pancakes. Oil a skillet, on medium heat, poor cake batter on pan, wait until bubbles appear then flip them once. Wait about a minute or until done and slightly golden brown.
These are fluffy but heavy. Kinda like a pound cake. I personally love the texture. If you want to make it healthier you can omit the sugar.

Putting these of wuffy's Must Try list! Bet they'd be nice with a bit of warmed applesauce instead of a syrup. Perhaps even a little dollop of sour cream with the applesauce, for a really nice and tangy contrast. Ooooo YUMMMY yum yum yum!

I love these spices! Sometimes I go a little overboard with them too... A week or so ago I made cookies with these spices and added a bit too much clove... they kinda numbed my tongue XD
These left such a wonderful aroma lingering in the house! I will definitely be making them quiet a bit more. We had them with strawberry sauce, but apple sauce, or baked apple slices with some sour cream sounds wonderful!!

And yes, clove will definitely numb you up! They used to use oil of clove for sore teeth/gums.
And the spices make the house smell SO nice after cooking them! (Curry does it too, but not everyone finds that quite as appealing. *GRIN*)
