Ingredients
3 green tomatoes
3 red tomatoes
1 sweet banana pepper
2 oz of diced red onions
2 oz diced zucchini
2 oz of diced sweet dried cranberries
1/2 tbs black pepper
1/2 tbs sea salt
1/2 tbs of garlic salt with parsley
7 drops Louisiana hot sauce
your choice of pasta sauce {this recipe uses meat flavored}
1 lb your choice of meat ground chicken, turkey, beef, or sausage (this recipe uses ground chicken)
1 tsp of Kraft lite Balsamic dressing
fresh mozzarella cheese

TOMATO PREP
step 1 preheat oven to 430 degrees
step 2 grab a oven pan and place some foil in it and spray it with some pam.
step 3 take and slice a thin layer of the bottom of all your tomatoes and cut the top of the tomato where the stem was.
step 4 take a sharp knife and cut the inside of the tomatoes slowly leaving enough room to allow for stuffing.
step 5 scope out the center of the tomato in the ring you traced be careful not to puncture the bottom of the tomatoes too badly.
step 6 take the insides of the tomatoes you scoped out and use for a future recipe

FILLING PREP
step 1 take your meat of choice (this recipe used 1 pound of ground chicken) and place it in a bowl
step 2 take a zucchini and slice 4 thin slices and dice them up and place into your bowl
step 3 place 1/3 cup of white minute rice into the bowl
step 4 take 1 oz of sweet dried cranberries and dice them up and place into the bowl
step 5 take 1 oz of diced sweet banana peppers to your mixture.
step 6 add 1 oz of diced onion (red onion was used in this recipe)
step 7 add your 6 to 9 drops of Louisiana hot sauce,1 tsp of Kraft Balsamic dressing, 1/2 tbs of black pepper,1/2 tbs sea salt, 1/2 tsp of garlic salt and parsley
step 8 shred some fresh mozzarella cheese on top of everything until there is a nice layer
step 9 mix the ingredients very well

STUFFING & COOKING
step 1 take your tomatoes and fill until the stuffing is about 1 inch over the rim of the tomato then smooth it out around the tops
step 2 repeat step 1 for the other tomatoes
step 3 evenly space the tomatoes onto the cooking pan
step 4 place into the oven at 430 degrees for 28 mins
step 5 after 28 mins have passed pull the tomato's out and then dress them on their tops with your pasta sauce of choice (meat sauce was used for this recipe)
step 6 place back in the oven for another 4 to 5 minutes to allow the pasta sauce to warm and dry a little
step 7 pull tray out and let it stand for 2 mins then serve.
side for this dish were Mozzarella balls, cup of fruit salad and cranberry ginger-ale
side note
the green tomatoes stay firmer and have a mild taste but are very flavorful
the red tomatoes have a sweeter taste but become soft around the edges both have plenty to offer in the area of taste
