It's been a while that I posted something, that's simply because I produced some small disasters in the kitchen the last 2 weeks lol'
No kidding, some of the stuff was hardly eatable 'n made me breathe fire x_x'
Aaaaaaaaaaaaaanyways, here's fox's mozzarella noodles 'n they are surely tasty!
I'd even go as far as to say it's almost restaurant worthy quality :D
Using the ingredients listed below gives a meal for 3-4 people or 2 really hungry people.
Ingredients
1/2 onion
2 pieces of garlic
4-5 medium sized tomatoes
300g mozzarella
a package of feta (usually 150g-200g)
a cup sour cream
olive oil
soja sauce
salt
flour
herbs
2-3 hands full of noodles (thin ones) - I used 1/3 glass noodles to look more fancy
How to
Cut the onion and garlic in small pieces.
Proceed with washing the tomatoes and cutting the feta, mozzarella and then the tomatoes in slices.
(eat or throw away the top 'n bottom of the tomatoe as it's too hard!)
In my case the tomatoes were quite big so I cut the slices in half.
Keep the ingredients on separated plates, it will make it easier later.
Put the noodles in a pot that's been filled halfways with water 'n 2-3 fingertips salt.
Cook them for like 20-40 minutes, you'll see when they start bending 'n wiggling, once soft 'n eatable they're done and should be put in a sieve that's been placed in or over the sink.
While the noodles cook you gotta make the sauce!
Place a pan on the stove on highest heat 'n put the sour cream inside.
Stir it well to prevent it from burning 'n add about 3 spoons of olive oil.
Now mix it with the onions 'n garlic pieces and always keep on stirring!
Add 2-4 finger tips salt, 2 tea spoons soja sauce and the feta stripes and stir it for another 5-10 minutes.
Now throw the tomatoes to the mix and again, stir it for about 2-5 more minutes on about 40% reduced heat(!)
Next you add 2 finger tips garlic powder and 2-3 tea spoons of herbs, I used herbs of the provence..
It's some sort of green herb mix but you can use anything that you usually use as topping for mozzarella and tomatoes :D
The noodles should be about done by now, check them 'n remove them from the stove if that's the case.
Now add the mozzarella on top of it 'n cook it 2-3 minutes by stirring between the mozzarella pieces using a wooden spoon.
it will simply ruin the nice looks if you do it the brute way x)
Reduce the heat by another 20% and once that's done the mozzarella should start losing it's form a bit.
That's what we want and now it's time to add about 3-4 tea spoons of flour to the mix BUT slowly and not all at once or you'll have large nasty floor globs in the pan!
Stir between whats left of the mozzarella 'n wait till it's a quite substantial sauce.
Continue this until the mozzarella pretty much became part of the sauce and is no longer "visible" as separate ingredients.
Now let it rest for like 5 minutes and switched off heat.
When you put the spoon inside and pull it out again you should have long cheesy threads connecting spoon and pan, that's just the way it's supposed to be and means you are done!
How to serve
Take some deep plates 'n put the noodles inside, then add the sauce on top.
Make sure everyone gets a fair share of tomatoes and you might want to use a sharp knife to cut the sauce threads on the way from pan to plate x)
