After seven iterations I think I've finally found a Flagon I'm satisfied with! Here's their backstory from the old reference as it hasn't changed since then:
A leather golem created to aid with alchemy experiments. They escaped from their warlock master and now run an apothecary shop. They mix ingredients by swallowing them whole before pouring them out of its hollow tail. Around their neck is a cork they use while mixing reactive or toxic ingredients.
Flagon has a blank personality and is slow to understand anything outside its created purpose. They enjoy working and will spend all of their money on more ingredients. They have an encyclopedic knowledge of most alchemy short of the philosopher's stone and speak in an alchemical gibberish nobody seems to understand.

"Blank personality" That reminds me of a silent laidback character that I kinda like. It would be like me talking to him, having no clue of his language, then resorts back to talking to myself as he listens to me with no clue of what I'm saying to him. I like that a lot, even the description I really like.

specifically, what kind of stuff does he make? like does he specialize in any particular field of drugs like medicine and cures, or enhancement and transmutation substances? or does he just make whatever fits his fancy at the moment and sells it?

A little bit of everything! Sometimes it's innocuous jobs like curing warts or brewing love potions. Sometimes it's more sinister like assassin poisons or necromantic ingredients. Flagon couldn't care less how morally-questionable the job is. They enjoy the work in and of itself.

heh, now does he have any real reason to pursue the philosopher's stone? like does he actually want to produce loads of gold and silver for himself? or is it more of a 100% completion thing, and knowing the recipe would make him feel complete?

Flagon would have absolutely no use for the philosopher's stone! They'd probably just throw it out and then who knows what happens next? To me, golems are a bit like medieval robots. They're pre-programmed to have certain goals without caring about the end-result. Flagon is a lot like WALL-E in that respect.
They're not very bright so you could probably trick them into doing anything with promise of the philosopher's stone!
