White can be a tricky color to shade (especially if you're using chiaroscuro shading) because you have to offset it with a color that's not white (typically gray but sometimes blue). If you offset it with just the right shade of blue, you can create sort of a "marshmallowy" effect that you just don't get with gray. Not sure why that is.
