This one is for my dad, the #1 lover of Snickerdoodles!!!!!
Ingredients
1 cup butter, softened
1 cup white sugar
1/2 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
For the sugary coating
3 tablespoons white sugar
3 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
Combine the Butter, sugar, and brown sugar in a medium bowl.
Once that is combined add the eggs and vanilla extract and mix those in.
Next add your flour, cream of tartar, baking soda, spice, and salt and mix it all together.
Refrigerate for 2 hours.
In a small bowl combine the sugar, spice, and cinnamon until fully combined.
Roll small or medium balls of the cookie mixture into your sugary coating and place on a pan.
Cook at 375 Degrees F for 8-10 minutes, BUT NOT ALL THE WAY. Snickerdoodles are NOT meant to be cooked all the way!
Take out and let cool and enjoy!
