Old family recipe made every fall.
What You'll Need:
-4 eggs
-3 cups sugar
-1 lb (13 oz) can of pumpkin
-1/3 cup water
-1 cup vegetable oil
-3 1/2 cups all purpose flour
-2 tsp baking soda
-1 1/2 tsp salt
-1 tsp cinnamon
-cooking spray
-1 large mixing bowl
-10 mini loaf pans (3.31 in W x 1.88 in D x 5.72 in L)
-flour sifter
Step 1:
Start by preheating the oven at 350 degrees. Mix every ingredient, except for the flour, together in a large mixing bowl.
Step 2:
This step takes a while, but it's how it's done. Place flour in the sifter 1 cup at a time and slowly sift the flour into the batter while stirring. Works best if you have an electric mixer, but you'll need a really big bowl. If not, mix together with a whisk. Continue process until all of the flour is gone.
Step 3:
When all the flour is mixed in, spray the loaf pans with cooking spray and fill them half full each with batter. Makes 8-10 loaves depending on how much batter is placed in the pans. Bake in the oven for 45-50 minutes. Use a toothpick at 45, if it comes out dry, they're done. Remove from oven and let cool for 5 minutes before wrapping with tin foil.
