I haven't seen the American version yet, but if they're spelling it "okami", they probably are doing that because most people wouldn't know how to pronounce the pidgin Japanese properly. "Ookami" can also be romanized as "Oukami","Ohkami" or "O-Kami".. Japanese doesn't traditionally use Roman letters, so it actually doesn't matter, as long as it's spelled so the "OH" sound is there and stretched. The official Japanese Romanization for this title, actually, is "O-Kami" which can also be a play on words as "kami" means something like a spirit or a god.
I know it's been partially in kana, which is why I thought it could also be a play on words. It does appear to be a wolf-spirit after all. Romanization is irrelavant because there's no real way to Romanize that language. Thirdly, look at this official URL and the logo on the homepage. http://www.o-kami.jp/
But even with that play on words, "Big Spirit" is spelled the exact same way as "wolf". The 大 in 大神 is still "oo" and not "ou", like a long "o" would be spelled in words like どう or 魍魎. Just noting so that others who may not know Japanese well do not get confused that "oo" and "ou" are always interchangeable.
