
Now this was a fun one! We have a dairy-free, and flourless brownie! It can also be nut free if you use soy butter instead! So incredibly versatile!
Ingredients
1/2 cup cashew butter
1/2 cup canned pumpkin puree (NOT pie filling)
1 large egg
6 Tbsp honey
1/4 cup unsweetened cocoa powder
2 tsp vanilla extract
1/2 tsp baking soda
Optional: 3 Tbsp dairy free chocolate chips
Instructions:
Combine everything EXCEPT the chocolate chips into a bowl and make sure to mix well.
Add chocolate chips OR hold onto them for later. We added them to the mixture and in turn it made the brownies more mushy.
Put your brownie mixture in a 8x8 pan and preheat the oven to 350 F.
Cook your brownies for 25-30 minutes.
If you held onto your chocolate chips you can melt them and put them ontop of the brownies now.
Eat with dairy free ice cream!
