My meagre three blue potatoes transformed into the magnificent bounty you see before you.
While they look kind-of mottled on the surface when you break them open the blue transformed into a gorgeous indigo interior... and they taste delicious.
Mmmmmm... Blue Fries.
Here's how Home fries are made in my household....
Wash potatoes thoroughly
Cut into desired thickness of fries.
Let potato slices soak in a bowl of water for 15 minutes
Drain, lay on paper towel and blot dry.
Fill a suitably sized pot with enough oil to submerge your quantity of fries, and turn temperature to 'high'. Put one 'test-fry' into the oil to tell when it is ready.
Using a 'sieve-spoon' SLOWLY LOWER the fries into the pot (Never just toss them in unless you like increasing your chances of grease fires in the house).
Let them sit in the boiling oil for approximately 8 to 10 minutes or until they get the color of your preference.
Fish them out with the 'Sieve-Spoon' and put into a bowl lined with paper towel and let the excess oil be pulled away from the fries.
Let cool enough to eat and enjoy.

How crisp do the outsides get and how fluffy are the insides?
I've taken to blanching my fries lately (Boiling them until tender) before frying them, trying to get a crisp outside on thicker fries while still getting a fluffy interior.
Also, never seen blue potatoes before... I may have to look into that.
