The reason why there is a lack of variety in their designs, Is because they still had to animated said characters. Your version of Amunet is still very stylized in opulent Apparel and classic Disney look. (And her having a slim hourglass body make her sexy.) But then we realize it would take awhile to animate your version well.
Oh! And her boyfriend on the right looks just as good as she does. I like to guess that She met him some time after her escape from the pyramid. They become lovers, And he glad fully embraces his ancient Egyptian heritage with her.

The thing is that animation has now become a lot easier (thanks to technology), but the main problems actually are clients that expects the artists to perform a miracle within a tight deadline and a limited amount of money. The money providers often are not aware how much work and skills it takes to do animation. Good quality is pricey and takes time and artists are not machines.
