I'm guessing a pony could probably operate a DSLR. You'd need to have the LCD on the back in viewfinder mode, and kind of turn your head to the side if you wanted to get close to it. You could probably compose and focus OK, but white balance or overall brightness would be harder, due to pony eye colors.
Maybe you would either trust the camera or always shoot in auto-exposure-bracket mode. In theory, it would be possible to measure a pony's eye color, and then tell the LCD on the camera to overdrive the colors that the pony's eye won't respond to as well, so that what you see would be approximately correct. I don't know if any cameras actually support this, though.
It would probably be too hard to get your eyeball close enough to the viewfinder on a regular SLR, or the optical viewfinder on a DSLR, to be able to use a camera that way.
Deluxe mode: get some kind of remote viewfinder monitor, with a wireless link to the camera, and put it inside the pony's head, between his eyes. On the other hand, that would cause some backlight glow from the pony's eyes when operating. Hmm.
