I recommend Ultrasabers first. They have the largest selection of sabers of any other sites and possibly the best prices per options, they even fixed an issue with one of mine free of charge. I am being kinda biased too since that's where I've bought three of my sabers, but I don't look down on anyone if they buy from others, a saber is a saber after all. I would get on their email list to watch for deals and sales, they also advertise their new sabers they release that way. Also, check out their forums, lots of questions can be answered there, most others don't have forums.
Saber forge is another good one, their sabers are a bit more expensive and have few options to customize, but some of their hilts are really nice looking with lots of detail.
Kyberlight is a newly formed saber shop. They sell sabers with a base hilt and you buy addon parts to customize. They usually have a sale of some kind going on. I recommend getting on their email list.
Then there's the Custom Saber Shop, they just sell parts and you build your own. A nice option for those that really want customization.
Vader's Vault is one of the last on my list to buy from, you're really gonna pay a lot for theirs, but it is an option.

Out of these, do any of them travel around to conventions? (Wizard Worlds or Comic Cons) I know at just about every convention we go to there is a large booth selling nicer sabers. The last one we went to they even asked us to pose with their sabers for a photograph, although I never found it later.
