My thoughts (after wondering how they know what the butterflies do; as I can't imagine where they could have seen it happen before) was that maybe the butterflies only destroy one "version" of yourself. So the real-world Gem is gone, but she's back as a baby in the real world. And so's Daddy, getting out of his wheelchair as a slightly creepy shapeshifting monster who still tries to do the best for his family.
Yeah, I don't think it's going that way. But the reactions of the people she works with would be priceless when they find out. (I forget names, sorry).

But, Gem wasn't suffering, so the butterflies wouldn't have eaten her soul.

I don't know what will happen, but possibly Gemma will wake up to Paul, and Jack and Souffle will wake up in their office/room, and all the connections to the afterlife will be severed. Nicole, ZeeZee and Rasile will be dead, Gemma, Jack and Souffle will be alive, and they won't be able to interact with each other again, but Jack does end up with his daughter who saved his life.

But, as I said, I don't know.
