One Pot Chicken Noodle Casserole
I made a great dinner tonight for the Wolf and I. I cut the recipe in half because it was so large: feeds 10! Instead of egg noodles I used penne regati. Really nice! When I make it again I'm going to add some flour to thicken it up. The pepper-jack cheese was a nice touch. Even though I don't like spicy foods this was good.
They have an optional step at the end to put it in the oven for 15 minutes. Do it. Especially if you do this in a cast-iron skillet like I did. I also cooked the pasta separately, then when it was al-dente, drained it and ran cold water in it. When I put it in the oven I added the pasta to it (but not too much!) and the breadcrumbs. But don't just sprinkle the bread crumbs on. Microwave 2-3 tablespoons of butter and mix the bread crumbs into that. Then crumble it on.
