This was in Tokyo Dome City where we spotted the first real ramen cart. Pretty cool, and while we were tempted to get some food there, it was kind of busy. The proprietor isn't completely visible as he's busy as hell preparing orders at the back of the cart. These guys just come rolling in, set up and start serving soup wherever they are cleared to operate. At the end of the day, the whole thing folds up, chairs get loaded on the cart and he wheels the entire shop away.
The food is something we both miss sooo very much. I haven't had any decent gyōza or bowl of ramen since I left. You can get both here, but they never touch the awesomeness of what you get from a land where people strive for perfection in just about everything.
That said, we had some of the worst ramen ever right in the Tokyo dome complex. Made my fox sick and was just plain bad so not everyone is working toward excellence it turns out.
