
It's been a while since I baked a cake and am out of practice with the decorating, but it still tastes good lol. Some of the measurements are not specific.
CAKE: (x2)
2 Cups Flour
2 Cups Sugar
1 1/4 Cups Oil
4 Eggs
3 Tsp Cinnamon
2 Tsp Baking Soda
Pinch of Salt
2 Cups Shredded Carrots
Raisins
Chopped Walnuts
Vanilla
Preheat oven to 350F. Butter bottom and sides of 4", 6", and 8"round cake pans, place parchment rounds on the bottom on pans.
Mix Sugar and Oil. Add eggs, one at a time, continue mixing. Add a couple dashes of vanilla.
In separate bowl combine flour, soda, salt, and cinnamon. Use a fork to mix together, add to the wet mix. Once dry and wet ingredients are mixed thoroughly add carrots, raisins, and walnuts. I used about 3 handfuls of raisins, and a handful and a half of chopped walnuts.
Pour batter into cake pans, making sure to tap on counter top to help remove bubbles. Put into heated oven. Check at 30 minutes. The 4" round should be finished. Continue to bake the 6" and 8" rounds until finished, around another 10 minutes.
Once cakes are cooked remove from oven and place on cooling rack. Let cool for about 3 minutes then, using a butter knife, run along the edges to help cakes to come out cleanly. Turn cakes upside down on cooling rack and they should slide out.
CREAM CHEESE FROSTING: (x3)
8 oz Soften Cream Cheese
1/2 Cup Soft Butter
Powdered Sugar
Vanilla
Cream together cheese and butter. Add vanilla and powdered sugar until desired taste and constancy.
Once cakes are cooled level any uneven tops. Place one 8" layer on cardboard round ( use a dollop of frosting to stick cake to board) Frost top of cake and place second 8" cake on top. I turned the second layer upside down, it makes it easier to frost without getting crumbs in the frosting. Put a crumb coat of frosting around the outside of cakes and a slightly thicker cover on the top. Follow same instructions for the next two layers.
From here you can decorate how you'd like. I added a bit more powdered sugar to the frosting to make it thicker so it holds up better for the design I picked. I also added pulverized walnuts to the tops of each layer, just because I had extras.
