While Vrghr was out at BLFC, wuff was chatting with his fur friends about different foods they'd enjoyed; trying to get some ideas on dishes to feed them at the Condo in Reno.

Vrghr didn't have the little appliance used to form the rice blocks, but wuffy figured he could do a riff on the dish's flavors as a skillet meal for his friends. Wuff's furry friends agreed to try out this experiment, and this is the result!
Vrghr calls this "Island Spam". It is composed of a bed of rice, with a bit of flavor provided by butter and bay leaves. Spam is diced and pan fried in a bit of olive oil and butter until crispy around the edges. Sauteed onions accompany the Spam to add some additional savory flavor to the meat, along with a dash of garlic powder and ground pepper. Frozen peas are added to bring color, texture, and flavor contrast, and to "stand in" for the Nori. And the whole thing is enhanced with some "Island Teriyaki" sauce, with added pineapple, sesame, and ginger flavors.
The result? Well, wuff used an entire small box of minute rice (about 8 cups after cooking), a full bag (1 lb) of frozen peas, and 2 full cans of Spam. And 4 hungry furries finished off every bite! LOL!
This was surprisingly good, and so easy to create! It was far better than those folks diss'ing Spam's reputation would have expected! Sweet, savory, complex, with a great aroma, and definitely filling.

Note: The Spam is somewhat salty, so wuff didn't add any additional salt to this dish. Taste before adding more of your own.
Ingredients:
2 cans Spam (wuff recommends the "Original", but "light" would work too)
1/2 Yellow Onion, diced
1 TBS Minced Garlic
1 pkg (16 oz) Frozen Peas
1/2 C White Wine
2 Tbs Irish Butter
1 Tbs Olive Oil
1/2 tsp Garlic Powder
1/2 tsp ground Black Pepper
1/2 - 2/3 C "Island Teriyaki" sauce w/Ginger & Pineapple

For the Rice:
4 C uncooked Minute Rice
4 C Water
1 Tbs Irish Butter
2 Bay Leaves
1/2 tsp Salt
Directions:
In a large pot over high heat, add 4 C of water, 2 bay leaves, 1 Tbs of butter, and 1/2 tsp of Salt. Bring to a rolling boil. Add the rice and stir once. Cover and turn off the heat. Allow to steam in the covered pot for about 5-6 minutes. Remove bay leaves and fluff with a fork. Cover again and hold until ready to apply the sauce and meat
Dice the Spam into 1/2 inch cubes
In a large skillet over medium high heat, add the butter and olive oil. Heat until butter starts to foam. Add the diced onion and the garlic and cook until onion just starts to turn translucent and garlic starts to get fragrant
Add the diced Spam. Spread into a single layer and allow to sear on one side until the edges start to get a bit crisped. (~3-4 minutes) If necessary, add a bit more oil and butter.
Toss/stir, and spread out again, allowing the Spam to sear on another side. Stir about and continue to cook until most of the Spam is toasted nicely on all sides. Sprinkle with garlic powder and black pepper
Add the White Wine and deglaze pan. Add the frozen peas. Cook until all the peas are bright green and softened, but don't over-cook and make them mushy
Add the Island Teriyaki sauce and stir everything around, coating it all. Cook for another 2-3 minutes, reducing and thickening the sauce
Plate a layer of rice onto warmed plates. Add a good portion of the Spam and sauce over top.
