There seems to be some interest in how to make those pancakes, so here it is. I'm not sure if pancake batter is the same all around the world, the one I use is kind of runny, not much viscosity at all.
Ingredients:
Wholemeal pancake flour (I like wholemeal better, has more flavour and fills up more) http://thedutchshop.com/images/km246127t.jpg
3 eggs
800 mL of milk
Cooking butter
1 Tomato sliced thin http://koken.met.aschwin.net/pages/.....obCAZ4GSO5.jpg
Loose leaves of fresh spinache http://www.dewassendemaan.be/graphi.....r/spinazie.jpg
like 4 spoons of Pesto Genovese (the green kind) http://www.goodnessdirect.co.uk/detail/714399b.jpg
1 bottle of Cooking cream (I used veggie cream) http://www.knorr.nl/livelinkImage.p.....?objid=9888542
1 Piece of Mozerella sliced thin like the tomato http://upload.wikimedia.org/wikiped...../Mozarella.jpg
1 Chevre Blanche (small slice of French goat cheese) cut into slices http://www.champershampers.co.nz/co.....er/LAFC002.jpg
some Pine Seeds http://www.degezondeapotheker.nl/im.....boompitten.jpg
3 cloves of garlic squeezed or crushed fine and mixed with Olive oil
Tomato and Mozarella pancake with pesto cream sauce
Prepare the pancake batter according to the instructions on the package into a rather liquid smoothness. Melt a small lump of butter ina frying pan, enough so when it melts it covers just about all of the pan's surface ina thin layer of grease. Wait for the butter to get brown before you throw in a like 3 slices of tomato, followed by a modest pawful of spinache leaves, just enough to spread out evenly in the pan. Let the leaves slink only for a few seconds before you pour a full ladle of batter into the pan over the leaves and tomato. Tilt the pan about to make the batter spread over the spinache evenly.
Wait for the batter becomes mostly solid from the top before you flip it over. The tomatoes will make the pancake rather brittle and it'll take some practice to keep it in one piece when you flip it over or you can use some extra batter to keep it all together better (I prefer my pancakes as slim as possible <3)
When you have flipped the pancake, turn the heat down low and place about 4 pieces of Mozarella on top and cover the pan with a lid (preferrably glass so you can see when the cheese has melted some). It's done when the cheese has melted.
The sauce you make by adding the cream and pesto together in a saucepan. Just heat it up together and add salt and pepper to bring it up to flavour. You can always add more pesto too if you like it a bit stronger.
Serve the pancake with a light dressing of the sauce <3
Goat cheese and garlic oil pancake
Just like the tomato one, wait for the butter to go brown before you add a pawful of spinache leaves to cover the pan somewhat. Don't wait too long before adding a ladle of pancake batter. While the batter is still liquid on top, sprinkle some of the pine seeds into it.
When the batter's gone mostly solid, flip it over. It should be a lot easier without the tomatoes in it for this one. Again turn the heat down low and add a few pieces of the goat cheese on top (remember you can also eat the wax on the cheese, it tastes just fine <3) and sprinkle it with the garlic oil before you cover the pan with a lid so the cheese has time to melt. As soon as the cheese has gone a little gooey it's ready to be served

You're such a nice and caring vixen *smiles* Made me feel warm inside reading through the whole journal.
I'd feel very happy to meet you as well someday... though if I did I think I'd want to hug and cuddle you without stopping ^^ Your cooking sounds wonderful too, very nice.

Woooow, I completely misread that comment of yours then, so you didn't know the chicken's name hm? Would it made to feel better to say hello to him, smiling, and say, "So, yeah, were eating you tonight, but I wanted to ask your name so I know who'd to tell my friends who were eating." XD Besides, I'm sure you all could have named him like, Fred or something....though I have a feeling someone would just say, "Lets name him Dinner! OMNOMNOM!"
Also, hey foxie? Hope your burns are feeling better. :(
